Chocolate Pie

Ben has been lobbying for me to make chocolate pie for our family get-to-gathers.  On Memorial Day, his wish was granted.

This recipe is adapted from several chocolate pie recipes, and I am amazed how good it is (shocked myself).  Do you dream about a dark rich chocolate pie?  Well then, this is the pie for you.   Try it.  It will knock your socks off!

Begin by melting the chocolate and butter in the microwave oven (do 30 seconds at a time until melted).  If you chop up the chocolate, it will melt faster.  I didn’t do that yesterday, and I want you to do better than I did.

Place prepared pie crust in a pie pan, and prick the bottom of the pie crust with a fork.  Isn’t that pretty!

Use a coffee filter (this is so much easier than cutting parchment paper to fit) to line the bottom of the crust.  Place the pie weights (I have these little ceramic stones, but you can use dried beans.) over the coffee filter.  Pre-bake the crust in a preheated oven for about 10 minutes.  When you do this, you won’t have bubbles of puffed crust.

Where, oh where have my pictures gone?  I can not find pictures of making the filling.  Use your imagination.  I do this by hand – easy breezy.  Combine eggs and sugar.  Add flour and salt.  Stir in milk (I have been known to use half and half) and vanilla.  Then add the melted butter and chocolate.  Mix well.  Now you pour this filling into the pre-baked pie shell (be sure to remove the pie weights and coffee filter), and it will look something like this.  Go ahead lick the spatula.  So good!

Bake for about 30-40 minutes until the center just barely jiggles.  Your home will smell divine.

I literally had to refuse to let the boys eat the pie when they first got to the house.  Honestly, I know what would have happened.  They would have eaten the pie and then gone home and left me with enough hamburgers, potato salad, beans, corn, and watermelon for Cox’s Army.  One who will remain nameless, began hunting, searching, and prowling for anything chocolate to eat because he said, the pie smelled so wonderful, he had to have something chocolate.  I stood my ground, and once they had eaten their meal, (which I must say they enjoyed) they had dessert.  Luckily they were not disappointed.

Top with a little whipped cream if you like, but the boys wanted their pie plain yesterday.

Chocolate Pie

A delicious dark rich chocolate pie. Very easy to make.

  1. Preheat oven to 350 degrees.
  2. Place prepared pie crust in a 9 inch pie pan. Prick bottom of crust with a fork.
  3. Put a coffee filter over the crust and fill with pie weights or beans.
  4. Bake in a preheated 350 degree oven for about 10 minutes. While pre-baking the crust, mix the pie filling.
  5. Melt butter and chocolate together in the microwave. Cook for 30 seconds at a time until melted. Set aside to cool slightly.
  6. By hand, mix together sugar and eggs. Be sure to mix well.
  7. Stir in flour and salt
  8. Add milk (or half and half), and vanilla. Mix well.
  9. Pour in the melted butter and chocolate. Mix well.
  10. Remove pie weights and coffee filter from pre-baked pie crust and pour filling into the crust.
  11. Bake in preheated 350 degree oven for 30-40 minutes. Center of pie will barely jiggle. Let cool before serving. Can top with whipped cream.
