Menu for Lunch at Sarah’s

What to take to Sarah’s for lunch?  I puzzled over various choices for several days.  The meal needed to be like a picnic – easy to transport and basically served at room temperature.  Plus, I wanted the meal to be tasty (Duh!).

Eventually I settled upon this easy menu:

Tomato Kettle Soup – You can serve this hot, cold or as we did – at room temperature.  (I thought it was okay at room temperature.) This is a recipe from Mary Pittman’s cookbook Collectibles for those of you who remember those little cups of tomato broth served with Goldfish Crackers at Mary Ellen’s Tearoom.  (Will share.)

Ham, Broccoli and Swiss Cheese Quiche (Will share.)  The quiche was still slightly warm since I made it that morning.

Chinese Cole Slaw (See the recipe HERE.)

Pumpkin Scones (Will share.)

Apple Bread Pudding with Apple Brandy Creme Anglaise and Sautéd Apples (Will share.)   This was a new recipe that Marshachristmas sent me, and I had be so wanting to have an excuse to try it.  Thank you Marshachristmas!  It is delicious!  We did warm this in the oven while we were eating lunch.  I loved this bread pudding and will make it again.

The menu was simple, and the guest seemed to like it.  Again, fellowshipping around a table with dear friends is the real blessing.
