Baked Oatmeal

StoneGable is a blog I enjoy.  Yvonne is one talented person – she cooks, she creates, she decorates, and she and her husband even do most of their home projects themselves.  On top of all of that, her photographs are fantastic.

A couple of times she mentioned Baked Oatmeal on her blog.  She even planned to have Baked Oatmeal when her daughter and son-in-law were coming home to visit.  Says I to myself, “Baked Oatmeal must be special.  I want to try it.”

My dear college friend Olive (AKA Sunny) came for a visit this weekend with her daughter and grandchildren.  Sorry to say – they were my Guinea pigs.  I wanted to try this recipe.  I was determined to make this recipe, and I needed more than Ever-Lovin’ and myself.  But happy to say – the Baked Oatmeal was a big hit – Yes!  Everybody (And I do mean everybody.) gave it a thumbs up.  Yea!

The recipe is super easy.  Begin by combining rolled oats, brown sugar, baking powder, cinnamon, and salt.

In another bowl, melt butter.   Then combine the melted butter with eggs, milk, and vanilla.

Mix oatmeal and butter mixture together.  Throw in some add-in goodies if you like.  I added dried cranberries and pecans.  Yummy!

In just a few minutes you will have a delicious breakfast, and the smell of cinnamon and vanilla will permeate your home.  Life is good.

The Baked Oatmeal was served with milk.  What I particularly like about this recipe is that the oats are crunchy, and they do not get soggy in the milk.  Try it.  I think you will like it.  We did!

Baked Oatmeal

A delicious breakfast treat from Yvonne at StoneGable.

Ingredients

Instructions

  1. Preheat oven to 350 degrees.
  2. Spray a 9X13 pan with cooking spray. Set aside.
  3. In a large bowl, combine oats, brown sugar, cinnamon, baking powder, and salt. Mix well.
  4. In another bowl, melt butter. Then combine butter, milk, eggs and vanilla.
  5. Mix oatmeal mixture with the butter mixture.
  6. Optional add-ins: Up to 1 1/2 cups total. Dried fruit - cherries, cranberries, raisins, or other dried fruits. Walnuts or pecans Chocolate chips or butterscotch chips
  7. Pour oatmeal into the prepared 9X13 pan.
  8. Bake in the 350 degree oven for about 40 minutes.
  9. Serve warm with milk, Other serving suggestions were - brown sugar, or ice cream.
  10. Enjoy!
