Sheila and I have been cooking together for as long as we have known each other. Back in the day, we were part of a group of “church ladies” that cooked lunch for about 125 women once a month for Baptist Women. We had so much fun together – and still do!
Sheila has always been beyond wonderful at presentation. She is from Virginia, and thus it is in her blood to be proper. Plus, what she cooks is delicious. Words can not express how excited I was when I got mail. My inbox announced that I had mail from Sheila, and the mail I received contained Sheila’s recipes from the Wedding Shower Yes! That meant I would be able to share the recipes with you. (Okay, I was in this picture, but my eyes are closed. So….)
Let’s begin with the recipe for Apple – Brie Pastry Bites. This is a perfect appetizer (or it could go on a dessert table) for the holidays. These little tarts look good. They smell good. And they are delicious. It is like eating individual portions of baked brie.
APPLE – BRIE PASTRY BITES
yield 4 dozen
Preheat oven to 375F.
Spray miniature muffin pans with cooking spray and then set aside. (You need 48 miniature muffin cups.)
1 package (17.5 ounce) frozen puff pastry, thawed (2 sheets)
8 oz Brie cheese, cut into 1/2 inch cubes – set aside
1-1 1/2 cups apples, chopped into small pieces; No need to peel the apples. (This is about one large or two medium apples.)
2/3 cup sliced almonds
1/2 cup chopped walnuts
1/4 cup dried cranberries – roughly chopped
Ground nutmeg
Cinnamon
Granulated sugar
Directions:
Unfold puff pastry, cut each sheet into 24 squares. (You will have 48 puff pastry squares.)
Gently press puffed pastry squares into bottoms of 48 greased miniature muffin cups.
Combine the apples, nuts and cranberries – set aside
Place one piece of Brie into each miniature muffin cup
Spoon the apple/cranberry/nut mixture over the Brie.
Sprinkle spices and sugar over the bites.
Bake at 375 degrees for 12 to 15 minutes or until the cheese is melted.
You can sprinkle additional spices after baking (to your taste).

Puffed pastry is filled with Brie, apples, cranberries, almonds, and walnuts for a delicious appetizer. (They would also be divine on a dessert table.)
Ingredients
- 1 package Puff Pastry 17.5 ounce - (two sheets)
- 1 1/2 cups Apple Chopped; unpeeled; about 1-1 1/2 large apples
- 8 ounces Brie Cut into 1/2 inch cubes
- 2/3 cups Sliced Almonds
- 1/2 cup Walnuts Chopped
- 1/4 cup Dried Cranberries Roughly chopped
- Granulated Sugar
- Nutmeg
- Cinnamon
Instructions
- Preheat oven to 375F
- Spray 48 miniature muffin cups with cooking spray. Set aside.
- Unfold thawed puff pastry sheets and cut each sheet into 24 squares. (You will have 48 puff pastry squares.)
- Gently press puffed pastry squares into the bottoms of 48 miniature muffin cups.
- Cut Brie into 1/2 inch cubes.
- Chop apples and combine with almonds, walnuts, and cranberries.
- Place Brie into lined miniature muffin cups.
- Spoon apple, nuts, and cranberry mixture over Brie.
- Sprinkle bites with nutmeg, cinnamon, and sugar.
- Bake in a 375F. degree oven for 10 - 15 minutes until cheese is melted and the bites are lightly browned.
- You can sprinkle more spices and sugar over bites when they come out of the oven if you like.
