The other day I tasted one of Ever-Lovin’s store bought cookies, and I could not believe how horrible it was. I asked him why he would eat such a thing. He said he had to have something to snack on. I felt about two inches tall. I had neglected my man. I promised I would try to keep some cookies available for him so he would not have to buy those cookies that left a bad taste in your mouth.
S0… I went to my mother’s cookbook – A+ in Cooking, and found a new recipe to try. Applesauce was in the fridge. Ever-Lovin likes oatmeal cookies . So…. Applesauce Oatmeal Drop Cookies submitted by Ted and Dorothy Hibbs looked promising.
Ingredients are pretty standard for cookies – butter, egg, sugar, flour, baking powder, soda, salt, cinnamon, nutmeg, cloves, applesauce, oats, and raisins. This recipe makes about 2 dozen cookies, so if you need a boat-load of cookies, you might want to double the recipe.
Cream the butter and sugar. The original recipe called for shortening.
Add an egg and beat well.
Combine the dry ingredients – flour, soda, baking powder, salt, cinnamon, nutmeg, cloves, oats, and raisins.
(Missing Picture)
Alternately add the dry ingredients and the applesauce until combined.
Drop by teaspoons onto a greased baking sheet. I used a scoop to measure out the dough, and I also used a baking mat.
Bake in a 375F degree oven for 15 minutes. The directions say to be sure and not overcook these cookies.
Applesauce-Oatmeal Drop Cookies are very tasty. The applesauce and spices combined with the oats make for a delicious cookie. Ever-Lovin proclaimed them “very good.” The cookies are soft, cake-like, and moist. They were easy to make, and I will certainly bake them again.
