Baked Pancake was a recipe I recently saw on the Mennonite Girls Can Cook blog. I could not wait to try it. Today was the day, and I am here to tell you that the baked pancake was so delicious that I can not wait to share the recipe with you.
The Mennonite Girls Can Cook recipe was for an Apple or Blueberry Baked Pancake. I had fresh peaches from the Farmers Market, and thought I would do a variation. Sweet Mother of Pearl – We were eating in “high cotton” this morning.

Preheat oven to 350F degrees. By the time the oven is up to temperature, you will have the peaches and pancake batter prepared.
To peel the peaches, drop them into hot simmering water for about two minutes. The peels will slip off. I used three peaches.
Slice the peaches.
In a cast iron or oven proof skillet melt 3 tablespoons of butter. At this point I decided my skillet was too small, and I changed to a 9 inch iron skillet.
Add the peaches and about 1/3 cup of sugar. Sprinkle in 1/2 – 1 teaspoon cinnamon. The home smelled divine! Let it cook until the peaches are tender and the juices are thick. At this point, I was afraid there was too much juice – peaches are juicy – so I ladled off some of the juice. Later we spooned this juicy syrup over the pancake slices, and it was wonderful!
Use any pancake batter you like – homemade or packaged. I used this oatmeal pancake mix (from Krogers) that I love. I used one cup of mix and mixed it according to package directions. I also added a splash of vanilla because….
Pour and spread the mix over the peaches and place in the preheated 350F degree oven to bake. Bake for about 15 minutes until done.
Insert a toothpick or cake tester into the pancake to check to see if the pancake is done. If the toothpick comes out clean, it is done.
Place a plate upside-down over the top of the skillet. Use oven gloves, and carefully invert the skillet onto the plate. If some of the peaches stick to the pan, just put them back on the pancake. Be still my heart! This is beyond delicious, and I certainly will make it again.
Slice into wedges and serve. You can use syrup or whipped cream for toppings, but we used the extra peach syrup – so delicious!
This is so much easier than flipping pancakes for a crowd – I would even serve it as a dessert. Any fruit should work – even frozen fruit. Increase or decrease the amount of ingredients according to the size of your skillet and the number of servings you need. Mennonite Girls Can Cook’s recipe was made in a 10 inch skillet, used 2 cups of pancake mix, and 4 apples.

Peach Baked Pancake

Baked pancake topped with delicious peaches makes for a wonderful breakfast. This is much easier than flipping pancakes for a crowd.
Ingredients
- 3 medium peaches peeled and sliced
- 3 tablespoons butter melted in oven proof 9 inch skillet
- 1/3 cup sugar
- 1/2-1 teaspoon cinnamon
- 1 cup pancake mix prepared according to directions or use your own recipe
- 1 teaspoon vanilla extract
Instructions
- Pre-heat oven to 350F degrees
- Peel and slice peaches
- In a 9 inch iron or oven proof skillet, melt butter.
- Add peaches, sugar, and cinnamon. Cook until peaches are tender and juice is thickened. If there is too much juice, ladle it into a small bowl and used as syrup for the pancake.
- Mix pancake mix according to package directions, or make your favorite recipe. Pour and spread pancake mix over the cooked peaches.
- Bake in a 350F degree oven for about 15 minutes until pancake is done. Insert a toothpick or cake tester into pancake to test if it is done. If the toothpick comes out clean, it is done.
- Place a plate or platter upside-down over the skillet. Carefully invert the pancake onto the platter. Be careful and use oven mitts.
- If some of the peaches stick to the pan, replace them on the pancake.
- If desired, serve with syrup or whipped cream. We used the extra peach syrup.
