Franklin Barbecue in Austin, Texas was named by Texas Monthly as the “Best Barbecue in Texas – 2013.”
Sweet Mother of Pearl – I think I understand why Franklin won “Best” – Moist, full of flavor, tender beyond belief. I didn’t think barbecue could be better than Louie Mueller’s, but I have to admit – on this day – Franklin’s was “Best.” From what I have read, Franklin’s use of hormone and antibiotic free meat makes the difference. There is something about how the fat renders out that is too technical for me. All I know is that it is beyond good.
Ever-Lovin’ waited 50 minutes outside in cold drizzly weather to buy Franklin barbecue. (Thankfully, there was an awning to stand under.)
Once inside, he had to wait over 30 minutes to get to the counter. The sad truth is – I think that was a short wait. I have heard that on most days people wait over two hours for the honor. (I was out playing with Super Sister. See why I call him Ever-Lovin’.)
Pit master Aaron Franklin honed his barbecuing skills at Louie Mueller’s. A little over four years ago (2009) he headed to Austin, and set up a food truck. His fame spread quickly, and after two years, he was ready to open a restaurant. In about four years, he has risen to the top of barbecue fame. Accolades extend beyond Texas. Last year, Franklin Barbecue was listed by Bon Appetite as one of the country’s 20 most important restaurants. That is a big award so I hear.
It must be in style to tape butcher paper menus to the walls of barbecue joints. Works for me.
You can avoid the lines by preordering 5 pounds of meat or a whole brisket, but there is a catch. You have to REALLY call ahead. When I called, all preorders were full until late February. (It was January 8 – Can you believe?) Franklin is open Tuesday – Sunday from 11 am to when the meat runs out.
I do appreciate Ever-Lovin’ standing in line and taking pictures. At least he really liked and enjoyed the melt-in-your-mouth barbecue.
