Number One Son’s sweet precious wife Mikel brought salsa to the July 4th celebration. I kid you not. The salsa was the hit of the party. I actually heard someone say, “the salsa is the best tasting thing here.” Now that is really saying a lot because all of the food was fantastic.
Many people asked for the recipe – so here it is.
First we must give credit where credit is due – This salsa recipe is Mikel’s version of Pioneer Woman’s Restaurant Style Salsa.
Since Mikel made the salsa for the party, there are no step-by-step pictures. Trust me. We can do this without pictures because it is a dump together recipe. Everyone was shocked that something this easy could be this good and fresh tasting.
Ingredients are:
Can of whole tomatoes with juice, can of Rotel (diced tomatoes and green chilies), chopped onion, sliced jalapeños. minced garlic, sugar, salt, ground cumin, lime juice, and dried cilantro.
Put all the ingredients in the bowl of a food processor. Pulse until the salsa is the consistency that you like. Serve with corn chips. That is it. Sweet Mother of Pearl. How can something this easy, be so delicious and fresh tasting?
Thank you Mikel for bringing the salsa and sharing your recipe.
Blessings to you and yours,
