Anytime there is a new restaurant on the east side of Central Expressway in Richardson, we consider it a reason to celebrate. We have begged for restaurants – any good restaurant for so long. I’m here to tell you, it has been slim pickin’s in our neighborhood – until now. Let it be known – the restaurant scene is getting better on Campbell Road in East Richardson. Some time ago we saw a sign that proclaimed, “Coming Soon – The Egg and I”. The Egg and I was coming to East Richardson? Oh my! This was major. We had eaten at The Egg and I in Addison, and knew they serve good food. Then we waited, and waited, and waited. Once a week we would drive by and lament – “not open yet”.
News Flash: The Egg and I is now opened for business. Clap, clap, clap, hooray! Not wanting to let any grass grow under our feet, we quickly made our way to The Egg and I last weekend for breakfast. Breakfast is my most favoritest meal of the day, and I love eating breakfast with Ever-Lovin’. When I see couples eating breakfast together, I think it is sexy or maybe just loving. I know this is weird, but it is like he didn’t leave in the middle of the night. He still wants to be with her – morning breath, bed head and all. It is a new day, and they are creating a new beginning together. It is one of the best feelings in the world. (gag!) Meanwhile, back to the review. How nice to walk into a new restaurant. Everything is clean. Even the silverware is still shiny. I loved the sign , “Mother always told you to eat a good breakfast!” At The Egg and I you will get a good breakfast. The menu is extensive. Ever-Lovin’ got eggs and turkey sausage ($7.69). He is still trying to be a little healthy.
The turkey sausage was right-on flavorful, and Ever-Lovin’ was very pleased with his selection. I ordered the Colorado Jack Scramble ($8.59). and I loved how it was filled with ham, tomatoes, green peppers, onions, and topped with pepper jack cheese and green onions. Yummy!
The Colorado Jack Scramble was really big because it is made with three eggs plus all those other ingredients. I took half of it home. See that little container of pork green chili sauce. Oh, yah! Excellent!
FYI: The gourmet coffee was also delicious.
The Egg and I is opened for breakfast and lunch – 6 a.m. – 2 p.m. on weekdays (2:30 p.m. on the weekends). It is located at 930 East Campbell Road. They have a free meeting room that can be reserved which is a nice touch. To be honest, it does seem to be a little pricy, so we won’t be going every Saturday. Then again, it is a step above some of the other breakfast restaurants around, and there just aren’t that many choices.
When I go back, perhaps I will order a pancake. I saw one come out of the kitchen. You get only one pancake, but it is hanging over the plate huge. Something to think about.
Life is good, and I am blessed,
Blessings to you and yours,
